Glazed Carrots

Keep you immune system strong with an extra helping of carrots. Cooking carrots enhances the bioavailability of the beta-carotene in the carrot. The body converts beta-carotene into vitamin A, which is important for vision, immune function and cell growth. Anti-oxidants protect the body against oxidative stress. Make sure not to over-cook carrots as this can have the opposite effect.

Ingredients

1 packet baby carrots (500 g)

1 cup Medspresso™ CBD-Infused Rooibos Tea

5 sprigs of fresh thyme

¼ tsp cinnamon

1 tbsp Liviana® CBD-Infused Extra Virgin Olive Oil

1 tbsp Liviana® CBD-Infused Honey

Pinch of salt

Method

  1. Place the carrots, Medspresso™ Rooibos Tea, cinnamon, thyme and salt into a medium sized pot over a medium heat.

  2. Bring to a boil without a lid for 15 - 20 minutes until carrots are cooked, a sharp knife should pierce the carrot effortlessly. 

  3. Place the Liviana® CBD-Infused Extra Virgin Olive into a pan over a high heat. Add the carrots and and drizzle with the Liviana® CBD-Infused Honey. 

  4. Pan fry for 3 minutes for a slight golden char on the carrots, tossing occasionally. 

  5. Serve as a side dish to protein rich meal.
