Pomegranate and Mint Mince
Serves: 4
Portion size: ½ cup mince

Ingredients

500 g lean beef mince

½ red onion, diced

½ tsp ground turmeric

½ tsp ground coriander

¼ tsp ground ginger

1 tbsp black garlic

½ tsp fresh garlic

1 tbsp worcestershire sauce

1 tbsp balsamic vinegar

2 tsp Liviana™ Honey

1 tsp fresh thyme, chopped

¼ cup fresh mint, chopped

½ cup pomegranate juice

½ cup fresh pomegranate rubies

Salt and pepper

Method

  1. Fry the mince, onion and all the dry spices together over a high heat for 7 - 10 minutes until the mince is cooked. Season generously with salt and pepper.

  2. Add the black garlic, fresh garlic, Worcestershire sauce, balsamic vinegar, and pomegranate juice to the mince.

  3. Lower the heat to a medium simmer. Cook until all the moisture is evaporated. Add the mint and Liviana™ Honey and combine. Cook over a low heat for 2 minutes.

  4. Garnish with pomegranate rubies
