No Sweat Sweet Potato
Serves: 4
Portion size: ½ cup mince
Prep time: 5 minutes
Cooking time: 30 minutes


Cutting Board


2 large orange sweet potatoes

1 tbsp Liviana™ Extra Virgin Olive Oil


  1. Halve the sweet potato length wise with a sharp knife.

  2. Place on a baking tray in the oven at 200°C for 40 minutes.

  3. Finish off with Liviana™ Extra Virgin Olive Oil.

  4. Delicious with some Herby Tzatziki* and Pomegranate and Mint Mince*.
