Ingredients

6 tbsp low-fat plain yoghurt

1 tbsp fresh basil, finely chopped

1 tbsp fresh parsley, finely chopped

1 tbsp fresh mint, finely chopped

10 cm cucumber, grated

1 tsp lemon juice

Salt and pepper

1 tbsp Liviana™ Extra Virgin Olive Oil

Method

  1. Grate the cucumber finely. Squeeze out most of the liquid.

  2. Add the yoghurt, herbs, lemon juice and seasoning to the cucumber. Combine well with a spoon.

  3. Drizzle Liviana™ Extra Virgin Olive Oil over the top.

  4. Serve as a Mediterranean topping to your favourite cut of beef or lamb. Use as a dip or sauce for grilled veggies. Perfect for sandwiches as well.
