6 tbsp low-fat plain yoghurt 1 tbsp fresh basil, finely chopped 1 tbsp fresh parsley, finely chopped 1 tbsp fresh mint, finely chopped 10 cm cucumber, grated 1 tsp lemon juice Salt and pepper 1 tbsp Liviana™ Extra Virgin Olive Oil
- Grate the cucumber finely. Squeeze out most of the liquid.
- Add the yoghurt, herbs, lemon juice and seasoning to the cucumber. Combine well with a spoon.
- Drizzle Liviana™ Extra Virgin Olive Oil over the top.
- Serve as a Mediterranean topping to your favourite cut of beef or lamb. Use as a dip or sauce for grilled veggies. Perfect for sandwiches as well.
