Ingredients
4 beetroot seed crackers
2 tbsp low fat plain cottage cheese
4 thin slices mozzarella cheese
8 slices cucumber
2 pickled beetroots, sliced
4 lettuce leaves
2 tsps Liviana™ Extra Virgin Olive Oil
Salt and pepper to taste
Method
- Smear the cottage cheese onto the crackers.
- Stack all the ingredients onto the cracker.
- Season with salt and pepper and drizzle with 2 teaspoons of Liviana™ Extra Virgin Olive Oil.
