Ingredients

4 beetroot seed crackers

2 tbsp low fat plain cottage cheese

4 thin slices mozzarella cheese

8 slices cucumber

2 pickled beetroots, sliced

4 lettuce leaves

2 tsps Liviana™ Extra Virgin Olive Oil

Salt and pepper to taste

Method

  1. Smear the cottage cheese onto the crackers.

  2. Stack all the ingredients onto the cracker.

  3. Season with salt and pepper and drizzle with 2 teaspoons of Liviana™ Extra Virgin Olive Oil.
