2 tbsp low fat plain cottage cheese
4 thin slices mozzarella cheese
8 slices cucumber
2 pickled beetroots, sliced
4 lettuce leaves

Salt and pepper to taste
- Smear the cottage cheese onto the crackers.
- Stack all the ingredients onto the cracker.
