Ingredients
4 cups fresh basil leaves
¼ cup parmesan/Parmigiano, grated
¼ cup pine nuts*
2 cloves fresh garlic
1 tsp salt
1 tsp pepper
2 tbsp lemon juice
½ cup Liviana™ Eureka Lemon Infused Extra Virgin Olive Oil
*for a nut-free or more affordable option use sunflower seeds instead of pine nuts.
Method
- Place all the ingredients in a bowl and blend until combined, but still has a chunky texture.
- Taste and season if needed.
- Use as a healthy condiment in everyday cooking as you would use any other herb. Perfect on sandwiches, pasta or as a sauce on grilled veg or meat.
