Ingredients

16 baby potatoes

4 tbsp Liviana® Eureka Lemon Extra Virgin Olive Oil 

2 tbsp fresh rosemary, finely chopped

1 lemon

1 tbsp parmesan cheese (optional)

Salt and pepper

Method

Place the potatoes in a pot and cover with water. 

Boil for 10 - 15 minutes until the potatoes are soft and cooked. 

Place the potatoes onto a baking tray and press flat (about 1 cm thick) with the back of a cup. 

Sprinkle the Liviana® Eureka Lemon Extra Virgin Olive Oil, lemon juice, parmesan and chopped rosemary over the potatoes.

Season generously with salt and pepper. 

Place in a 220°C oven for 25-30 minutes or at 200°C in an airfryer for 20 minutes. 

Serve hot and crispy as the most satisfying starchy side. 

 

*Let the potatoes cool and reheat them to increase the resistant starch.
