Ingredients

2 large orange sweet potatoes

1 tbsp Liviana® Extra Virgin Olive Oil 

Method

1. Halve the sweet potato length-wise with a sharp knife. 

3. Place on a baking tray in the oven at 200°C for 40 minutes. 

4. Finish of with Liviana® Extra Virgin Olive Oil.

5. Delicious with some Herby Tzatziki* and Pomegranate and Mint Mince*.
