Ingredients
1 cup brown and wild rice
½ cup lentils
3 cups vegetable stock
1 tbsp psyllium husk
3 chicken breasts, cut into 1cm cubes
2 red onions
1 cup cherry tomatoes
1 garlic bulb, halved lengthwise
4 cloves Liviana® Black Garlic
2 tbsp Liviana® Extra Virgin Olive Oil
1 tsp cumin, ground
1 tsp coriander, ground
2 tsp salt
1 tsp pepper
Handful of fresh herbs
Lemon wedge
½ cup feta cheese (optional)
Method
Combine all the ingredients in an oven proof dish and cover with foil.
Bake for 35 minutes at 180°C in an oven or 170°C in an airfryer. Uncover and bake for a further 20 minutes at the same temperature.
Serve with some fresh herbs and a lemon wedge
