Ingredients

1 kg beetroot, julienned 

1 tbsp balsamic vinegar 

Salt and pepper to taste

½ tbsp Liviana™ Alfafa Blossom Honey

½ cup plain feta cheese

¼ cup micro greens for garnish

2 tbsp Liviana™ Extra Virgin Olive Oil 

Method

 Pre-heat oven to 200°C.

Place the beetroot, Liviana™ Alfafa Blossom Honey, balsamic vinegar, salt and pepper into a mixing bowl. Mix with a wooden spoon until the beetroot is evenly covered. 

Place the beetroot onto a baking tray and spread out into one layer.

Bake in the oven for 35-40 minutes until tender. Stir every 10 minutes. 

Place onto a serving dish. Garnish with micro greens and feta cheese. Garnish with micro greens, feta cheese, and a generous drizzle of Liviana™ Extra Virgin Olive Oil.
