Ingredients
4 orange sweet potatoes, halved
1 tbsp Liviana® Eureka Lemon Extra Virgin Olive Oil
Salt and pepper
1 avocado, sliced
Raita
½ cup plain yoghurt
1 tsbp Liviana® Eureka Lemon Extra Virgin olive Oil
1 tbsp fresh herbs, finely chopped
Juice of 1 lemon
Method
Season the halved sweet potato and cover lightly with Liviana® Eureka Lemon Extra Virgin Olive Oil.
Place in an air fryer for 20 minutes at 200°C or for 25 minutes in an oven.
Add all the ingredients for the riata to a small mixing bowl and combine.
Spoon the riata over the roasted sweet potato halves, and place some avocado slices on top. Season and sprinkle with lemon juice. Garnish with fresh herbs and enjoy!
