Ingredients
4 large braai mushrooms
Stuffing
2 tbsp smooth ricotta / cottage cheese / plain yoghurt
8 cloves crushed Liviana® Black Garlic in EVOO
Juice of 1 lemon
1 cup baby spinach, finely chopped
1 tbsp Liviana® Extra Virgin Olive Oil
2 tbsp parmesan / pecorino cheese
½ tbsp fresh flat leaf parsley, finely chopped
½ tsp Liviana® Crushed Garlic and Chilli (can make it more or less depending on personal preference)
Salt and pepper
Method
Mix together all of the ingredients for the stuffing into a small mixing bowl with a spoon until combined.
Spoon 1 tablespoon full of stuffing into each mushroom and spread evenly.
Bake at 200°C for 12-15minutes.
Serve with some fresh lemon as the perfect flavour bomb.
